That would be a thermostat that isn't opening.

I'm going to have to go back and read the whole thread to see but you haven't changed the water pump by chance? A lot of guys are running into problems when they are running later model engines that came with a serpentine belt and are running V belts on the truck or car and ask for a water pump to fit the engine model rather than one to fit the V belt application. That would cause the blades of the water pump to be running in reverse. The pump usually flows enough coolant at an idle but doesn't move enough coolant when you get up to road speed.

Looking at the O'Reilly's site I see that they do show both styles of pumps (V belt and Serpentine) for an 85K 10 with a 350.

Other than that I have never been a big fan of electric gauges of any kind and prefer the mechanical gauges if it is possible to run them even if a guy runs the stock electric gauge in the dash and runs a mechanical gauge in a gauge bracket under the dash.

I put a hi volume hi pressure aluminum water pump on my 73. And made so much pressure it held the thermostat closed.
Put the stock one back on solved all my cooling issue
