what carb do ya'll use for towing i have read and read and i can gather the Q jet is the way to go in most cases but i figured i'd see what ya'll use

I use q-jet on both my tow vehicle and my motorhome. and i tow with the motorhome too.

I got a qjet on my Blazer and it runs great no major problems.

i was thinking of just swapping in a electric fuel pump and a edlebrock

I like having an electric pump installed as a backup and for getting fuel to the carburetor quickly after it's been parked for several months. I personally wouldn't remove the oem pump.
