how to adjust fual mixture

well, my old quadrajet was running rich, and the adjustment screws were cut off and filled in, so i put another carb on it (a carter) i think ive got it running good, with each screww turned out about 2 1/2 turns counter clockwise, but am wondering how do i really know? is there a set way for doing this? thanks

Turn them clock wise 1 at a time till you drop rpms, then cc till you get the best idle speed. Do 1 side, then the other, then go back & do the 1st side a 2nd time. Then turn them slightly clockwise to get a 50 rpm drop in idle speed........69 longhorn.
