steering knuckle?

Has anyone used a newer style steering knuckle from a 01-05 with a hub
instead of a spindal? Would it even be possible to do?

Yes, I did this years ago for a SEMA Show truck. At that time we did not have our new modular spindle and brake kits.
The spindle tapers are a different size. The kingpin inclination is different. It will lower the truck by 3”. You will need to use a new OE hub. Buy it new; GM went thru many revisions in the first couple of years and had lots of bearing failures that confused the ABS sensor, and that caused brake shimmy. You will have to use a 6-lug wheel. It is a lot of work. Just use the new CPP spindles, hubs, and brakes, it’s way faster and easier.
