New Project - 70 Chevy C10

My name is Rob and I'm new here though I've been following the forum for some time. Just picked up a 70 C10 that I'm getting ready to tear apart and restore. It's a basic model, no power anything and a bit rough. It has a 305 (1986) and a THM350 trans, both getting removed. Ordering a 290hp 350 crate engine and a new trans. Lots of sheet metal work. As of now I plan to add disk brakes and lower just a bit. Nothing over the top, I just want to make it tight and strong. And add power steering.
Question:
The previous owner had installed new rockers and just riveted them in. Can I grind the seams and weld them? Or should I remove them and cut them in?
Thanks and I look forward to soaking up all the awesome knowledge around here.
First of many pics:

Cool truck! The rockers should be spot welded 1/2 to 1" from the top seams and all the way down on the bottom pinch and where they meet the floor/inner rocker area, I say remove the rivets and plug weld them in properly. Pics of what has been done would help. Later

Definitely not a factory color but I think I'll paint it medium green/white. I'll post more pics later today. Thanks!

Here are some pictures of the rockers that have been riveted in. I'm thinking I'll take them out, cut and prep the old metal and fit the new rocker panels and weld them in. The cab is in worse shape than I had hoped but I new better.

Looks like I need new front fenders. Are the reproduction fenders any good? Can anyone share their experience on this? I would hate to get a pair of fenders that don't fit properly. I'm also going to get new inner fenders as well and perhaps doors. Any guidance on this would be greatly appreciated! Thanks
