Will it overheat?
 

Will running my truck without the fan cover cause it to run hot? Is it a must to have wheel wells. Thanks.

maybe maybe not. I've run with a flex fan and no shroud and got away with it. Fan shroud is definately part of the design and helps create the suction to pull air. They are cheap so I would run it.
Wheel wells, I don't know, other than keeping crap out of engine bay.

Here is a simple test for you to try, at idle speed ,with fan shroud removed.

Will the radiator hold a small slip of paper on the front side?

If not it will overheat during extreme idling conditions.

You didn't mention if you have A/C , but that will make it worse.

My fan cover is cracked to hell on the bottom part. So, I trashed the bottom and I am going to replace it from the salvage yard.

i run a 350 with I6 rad and no shroud. i dont have any overheating problems but i also dont get much traffic or heat here

Wheel wells are there to keep crap from being slung or splashed off of the tires and onto the engine. Newer stuff can get away with a lot more since connections are weather tight. Back in the day, you could always count on a couple of cars getting drowned out going through even shallow water after a decent rain- splashing water onto the unprotected connectors would knock 'em out every time.
I'd run the shroud, it keeps air going through the radiator instead of around it.

My truck doesn't have a fan shroud and it stays real cool. Would run too cold if I hadn't changed the thermostat. I don't have a fan clutch though, so my fan is going full blast all the time...

It Does not keep air running though the radiator , but allows the Fan to be 8 to 10 inches away and still Draw air through from the back side.

Your shroud is designed to make air flow evenly and directly across the whole radiator. Air will take the path of least resistance. Further more the fan can no longer effective as it is just spining and pushing air around the engine compartment.
