I just put a deposit on a cab that I am picking up next Thursday. He is keeping the transmission hump cover. I am running a column shift automatic, where can I find a panel for the floor. Thanks !

High hump (what you pictured) is the only one that bolts in. The low hump is part of the cab, it doesn't unbolt, it's literally a piece of the cab.
You can cut a low hump out of a cab and make it work somehow, either bolting it in somehow or welding it. Otherwise you need to find another high hump like what you showed in your picture.

The cab I bought is now on the frame ! The interior is painted, the firewall is done and the rest of the panels hood, fenders, doors, cowl, and bed are all in primer and the truck is being mocked up and will be done for spring ! I do not want to drive it until all the salt has been washed off the roads from this winter. Adrian (owner) from Knox Auto Body is a friend, and he has helped me in the past. So there was no reason to get upset as it was out of his control. I do plan on having my next project painted by him.
