I may be looking for a shop to restore my 1972 GMC K1500. I would appreciate any recommendations/experiences with quality shops.

Best shop in America, as far as I'm concerned, is Musclecar Restoration in Chippewa Falls, WI.

I first saw a car that Warren Johnson's (the Pro Stock driver) had restored for him by his wife, a early 60s Impala, and it was perfect, as in like new, but better. So that's where I sent my Pontiac for a full frame off, and when it was time for the truck, where I sent it for paint and body. Lived up to expectations!

It can get pricey. My car was close to 2000 hours, and if you do the math at typical shop rates...

The truck was a special case, a bit of a favor or "thank you" I think, since they don't normally work this way, but I sent them the bare cab and chassis on the restored frame. They just did the metal work and paint, and installed everything that touches paint. That was at a fixed price of $25K plus metal work for the Longhorn seams and some extra holes, and might have included chrome, I don't recall now.

We couldn't come to a fixed-price agreement on my convertible 2+2 so I am doing it locally, because it was SUCH a basket case that I couldn't do an open-ended deal. But if your work is fairly well understood, there shouldn't be too many surprises.

But if you take a rust '69 Camaro and drop it off, you can come back later with a $250,000.00 check and drive a brand-new Camaro home, I imagine. So it depends on how much sweat equity you put in as well.
