Just use a tablet for guages?
I've got time to do some figuring yet with my project stalled at paint. I'm swapping a Gen IV 5.3 from an 08 Tahoe into a 65 C10.
Is it a reasonable option to just mount a nice tablet where your gauges would go and use the obd II port with a Bluetooth plugin scanner? |

That's exactly what I am doing on my Gen 3 5.3 out of an 06 Yukon into my 80 C10. Get a good quality Bluetooth OBDII scanner, and there are several options for what software to use. I like Torque Pro because of how customizable it is, but there are tons of other ones. I have had awesome luck with the OBDLink MX+ and it has a good refresh/rescan rate. I've used the super cheap ones on Amazon too, but they tend to not last very long and have slow refresh/rescan rates.

You can find some plug in "gauges" just look for the size/price, square or round that plug into your OBD port
