If you don't want to trim the fenders, I'd go with a 6" lift and 35x12.50 tire combo on 8 or 10 rims. With 4" of lift, you are probably going to have some rubbing if the wheel is cranked and your suspenion is compressed. If it is primarly a street truck, you can get away with 4" lift & 35's. My first K5 had that combo. My '69 has a 6" lift w/35s and my '72 has a ~4" lift with the stock 235/85R16 tires (about 31.5" tall - it looks a little anorexic.) The PO did a little trimming on the corners of the fenders on my '69, but it is very subtile.
