Your 85 should be just like mine. You have to remove the entire instrument dash bezel. Once that is removed, there are five or six screws above the glovebox and ash tray. You may need to loosen up the inside windshield cab moldings to pull the dash out. Straight forward but a PIA on your first time. Are you replacing original speakers? If not you gonna need some bracket to bolt up the speakers. I have a few pics of my dash removed. If I find them I'll post them here.
The inside is very paintable. Checkout what I did to my parts. New dash and oringinal tan interior pieces.

Colors are abundant. You can match just about any interior color.

To save money I bought a black pad then painted to match the interior. Color dashes cost more. I paid $199 for mine. I got from www.cheyennepickup.com These people have some too www.lmctruck.com www.yearone.com and very once in a while you can find an original on www.ebaymotors.com
