my theory would be to use the smaller carb because the size of the primarys and secondaries on a qjet are a night and day difference than on the edelbrock.
i just had to say it because i just went through the problem of too much carb on my 350 (9.5:1 comp, but not that big of a cam)
with not enough carb it will only hurt high rpm, but i think you would be fine up to 6500rpm with the 600cfm edelbrock
