I would get the engine as assembled as possible, and avoid the cost and time of putting the rest of it together yourself. I'm not familiar with the GM compressor set up, but the Vitage air system will bolt up to any GM accessory threaded head.
If there are features you don't like on the turn-key version, do some math to find out how much more it will cost to change things out. Valve covers, distributor, etc.
