I've got two 79's so I totally understand where you're coming from. I would first get the drivetrain etc. the way you want/need it. Then get the interior setup etc. Last I would do paint. The paint could get messed up if you work on something later on like a engine swap etc. I'm still working on mine and still needs paint LOL!!
