Similar to the rope trick a couple of other guys have posted, wrap a rag or small towal onto the end of the spring and wrap it around your hand. Stand on one end of the hinge and pull.
Using a rag or something soft is a good way to replace the spring as it will not damage any paint or other finish you have on your hinges and springs.
