I'm not a county inspector but I do have about 15 certifications from ACI, NICET, etc related to concrete. All concrete will crack. You can only control the cracking and that's by use of saw joints. Joints won't help the curing process. A deeper thickness of concrete will cure slower than thinner lifts, and this could lead to cracking. If it were mine, I'd reinforce it with 10 x 10 wire mesh or either use fiber in my concrete (whichever one was the cheapest). I'd keep the slump of the concrete to 5" or less, and I'd cut the saw joints just as soon as it was finished.
