You probably wouldn't want to do vinyl right over the rear sheetmetal. Vinyl tends to amplify any and all texture in what it's covering. So much so that when I used to do vinyl back in my car audio installer days we swept up the shop before starting, because just little flits and sawdust getting underneath it will cause a bump to show through. If you want to do vinyl, I'd recommend you first cut a panel to fit back there... maybe masonite or lauan board, either of which would be flexible enough to wiggle back there. A second trick is to use 3/16" headliner material as a padding before you cover in vinyl. Not only does this soften it up a bit, but it hides some of the aforementioned problems.
