On cold start when I tap the accelerator twice it should kick it down and it doesn't. Also it seems to idle slower as the truck warms up. Both of these things would indicate to me that it is the choke or fast idle neither one do I know how to adjust. Plus, I thought that a reman carb should be properly adjusted from the factory.

UPDATE:

It is definitely something to do with the kick-down on the choke. When I manually activate the kick-down on the choke it idles fine when I reach over and activate the accelerator and give it a little gas, the butterfly opens up and it idles full tilt again. Is this something that can be adjusted or should i take this carb back?
The choke pull-off could be bad, I've seen them bad right out of the box.. I'd see if it moves rather freely with the engine off..
