I agree. I think maple is the best way to go, if you don't like the natural cream color then it can be stained to match almost any color. I am planning on using a birdseye maple with a waterborne stain to match the color of my interior. I am also planning on making my steering wheel to match. The thing you need to remember about wood is that it needs room to move. Wood is a sponge, on wet and rainy days, it grows, on hot and dry days it shrinks. If it is not allowed to move with these changes in moisture, it will split.
