Post Will 31/11.5/15 Cooper Discoverer STT's on 15x10's fit on my '74 GMC 2WD?

Hi,
A little more than a week ago I purchased a '74 GMC 1500 Super Custom pickup. It has a new 350 with a little over 5000 miles on it, the body is is outstanding condition, the interior looks like its still new and the paint is in great shape. It is 100% mechanically sound and feels grat to drive. I picked it up for $1300 and I feel I did very well on the deal. Other cool stuff it has includes factory 3/4 ton springs, trailer breaks, heavy duty cooling and much more.
Now lets get down to the stuff I want to do to it. I want to know how big I can go with tires and wheels before I have rubbing problems. I have been looking at Cooper Discoverer STT's in 31/11.5/15 and having them wraped on some 15x10 steel wheels. I also want to pick up some fender flares, a heavy duty utility bumper, Outlaw drop bumper and a 9000 lb. winch. Can any of you tell me if these wheels and tires will work on my truck without rubbing? Do any of you know of where I can get a heavy duty utility bumper for the front of my rig (used it OK).
