From what I've been told by friends that have that set up you can expect to get around 14 to 15 mpg on daily driving. The difference in handling and load capacity will be beyond description and all for the better. They are awesome trucks.
One thing to remember is that the 2500s run E rated tires. They are expensive to replace.
If you don't need the load carrying capacity of the 2500, concider a 1500 crew cab. The interior room is the same but the bed is 8" shorter. You would get better mileage gy 4 to6 mpg. Just something to think about.
