Boy, for someone from Texas...you gotta lotta ambition! (My wife is from Texas). 
You can't do body work, huh? It's gonna be an interesting build. You should set out to find someones' extended-cab project that has a complete body and adapt your Cummins drivetrain to the chassis. There have been several who have posted their Cummins projects, so you gotta know they're gonna be posting, soon.
