I don't know how nice you are wanting the interior to look but I have seen some guys mount those gauges on top of the dash pad somewhere in the center of the dash. Very easy to see any time. Wouldn't be all that hard to fab an aluminum bracket or box to put them in. I never did like them mounted under the dash.
