Did you replace the pads/rotors/calipers at the same time? I replaced the pads and rotors on my little work beater a couple months ago and had the same issue. What I found was a little rust spot on the pins that the calipers slide on. It wasn't allowing the brakes to fully release and they would drag for a little while. Warped a brand new set of rotors before I figured it out.
