On those calipers, I actually went down to O Reilly and swapped for a fresh rebuilt set (under 30 for the pair). Then, I popped the piston out, removed the seals, coated and reassembled them.
I don't think heat buildup due to the coating is an issue. Look at all of the high end brakes, both OEM and aftermarket. A huge majority of them come from the manufacturer powdercoated in colors. Think Brembo, all of their calipers are coated bright red right out of the box.
