Three things could have happened. 1)The parts for the 73 model year hit the dealers in 72 in anticipation of the new body style. The dealers had them so they installed them on the 72 model year. 2) The trucks that have this style cruise were taken to the dealer at some point after the new style cruise was introduced and had it installed. That could be anywhere from early 72 through 75 or even later if a dealer still had one in stock. 3) the trucks that have this cruise were sitting on the lot until late in the model year or even into the next year and the dealer installed it when the truck was finally purchased.
It no great mystery.

If you're referring to the SPID label, you won't find cruise listed on one in 71 or 72, I don't believe its even disputed anymore that the factory never added them, its not even listed as an available option in the dealer books as it is in the earlier models.
