My buddy that's helping me rebuild my c10 panel is working on a '70 Datsun 240z with the L6 that came from the factory with a split header and dual 2bbl carbs. It looks awesome but man it's complicated!

I'd find a 350 and be done with it. They're all over the place. You'd probably end up spending less than turning that I6 into a kraut rocket.
