The heat riser passage is insignificant imho and I would just whatever is supplied with gasket.
I guess some mechanics will use whatever is available and maybe he didn't know any better I dunno.
Ask Edelbrock or any engine builder for their honest opinion on the matter but if you really think about it how well will an aluminum intake compress a steel gasket?

Also sometimes steel head gaskets are used on aluminum heads but it will indent a ring on head where the steel is around combustion chamber and of course the bolts on heads are torqued much higher than intakes too.
