First off welcome to 67-72. I have a 67 Short Fleet thats going to be my next build so your in good company. The main reason I wanted to put the engine in before I put all the inner fenders and outers on is because I have a ton of money in the paint and all it takes is one OH CRAP to ruin a paint job. To answer your question yes you can put the fenders on after the engine is installed. There is a ton of room under these hoods so its not hard to do at all.
