carb: a 750 holley is NOT an improvement over a good old q-jet (also a 750). GM ran them on all their top muscle cars back in the day. you can't beat the balance of efficiency and power that comes from a spread bore design. only thing out there that is better is a nice fuel injection system.

intake: remember that big blocks are low rpm motors and like a daily driver, do not benefit from an intake tuned to start developing power at higher engine speeds.

cam: roller valvetrain is the smart way to go....less valvetrain wear and tear and less power bled off as friction. another piece you will want to benefit the idle - 5000 rpm range on a street truck.
