I think you're on the right track. Nice trans, gear and tire size combo, nothing to change there. My advice would be to go with either the 5.3L or 6.0L whichever is available and fits your budget and definitely do the cam either way. The cam swap itself is very easy and you can find used cams on ls1tech an other places for as little as $200. You will need a valve spring tool, some wooden dowels and a longer crank bolt or tool. Stay away from "re-grinds" but the used aftermarket cams are no problem at all.
