I would weld the plate to the floor in a few places so it couldn't shift under load. This way you are not relying upon the single thickness stock floor for resistance to fastener shifting. At least with the welds too you have multiple points of contact to spread out the forces.

If you weld the bolt heads to the plate before you paint it they will stick up through the floor and act like mounting studs that one person can deal with without someone under the truck too.
