At close to stock height I don't think you will have any real problems. Most of the guys have to run spacers on the front to get a more standard size tire out to where it looks right and doesn't set in too far.
The info I found says that the 2wd S-10 rear axle is 53-5/8 wheel mounting surface to wheel mounting surface while the 4x4 axle is 60 inches mounting surface to mounting surface. I've never measured what my tires are outside to outside but I have about a half inch clearance between the fender lip and the sidewall. I have 255-60x15 on 8 inch rims on it now with a mid 70's Nova axle.
With the axle width and the wheel/tire info you should be able to figure the total outside width or what it would be fairly easily by laying a straight edge across the sidewall and measuring from the wheel's mounting surface to the straightedge multiplying that x 2 and adding in the axle width.
