There are a couple of sizes of sending units, depending on several things. But, it shouldn't be a problem to find/install one in the correct position. I installed a new engine wiring harness on mine, and the sending unit, too. Since my original '69 block has later model heads on it, we had to "shop" for the right sending unit, but got it done. My guage works just fine with new wiring and a new sending unit.

I don't know why you'd see a difference in coolant temp, with placement in the intake vs. the block or a head. In my opinion, the hottest place it can go, is right where mine is, between two exhaust ports.
