If it were mine I would do the swap. The original carb offers little in the way tuning, whereas the Holley can easily be adjusted to provide superior operation. Post #30 on the attached thread begins a step by step conversion to the Holley:

I’m no V6 expert but I believe the 60-61 intake manifolds ran a one barrel carb, so when swapping to the 2 barrel Holley the later manifold you already have should be the sought after version.
