These old trucks sit incredibly high in their stock configuration so I, personally, wouldn't hesitate to go with the 5'' drop. Just depends on the look you're after and how little tire clearance you can live with. As I mentioned earlier, my 68 Stepside is down 7" rear and 5" front, but it's licensed and insured in Washington State as a "Collector Vehicle" so I never haul much more than a beer cooler and a couple folding chairs.
