Assuming the carb looks in decent shape, just get a stock GM manifold (non-egr unless you have to worry about emissions) and give it a try. The GM manifold won't need any adapters and should be cheap to get from a salvage yard. If the carb works at all, it should get you through the rest of the restoration project. Once you get the rest of the truck fixed up, then you can always re-think the carb and manifold question. Until then, save your money.
