I have a Vintage Vehicle plate on my truck, as long as you don't use it as a daily driver you can get away with one of these plates. insurance was not too bad for a hobby truck, I got my insured to only $5000, that all they would let me get with out an appraisal. Laws differ form state to state to state, many states have some kind of Vintage Vehicle plate.

If you use an old truck to haul a race car, that is considered commercial, or if you sell t-shirts at car shows of you truck, is considered commercial, so be vary careful what you do with an old truck, those DOT cops can and will stop you for an inspection, and you better have your ducks in a row if you wan to keep you hard earned cash. anything over 10,000 lbs if subject to DOT Inspection, commercial or Not.
