I've owned five 67-72's in the last four or so years, as well as a few other classic cars previous to my current obsession. I can honestly say that I've enjoyed the ones I just cleaned up and drove more than the ones that I've done driver restorations on. Part of that is my lack of a good facility to work in, but I think that the other part is driving the restorations after they are done. I tend to notice every little flaw on the restorations, while I can more easily overlook the little stuff on the ones I just buy and drive. It hasn't stopped me from doing and planning more restorations, but I'm starting to realize that I like driving them more than I like working on them! Just my $.02, which is worth about $.01 in today's economy.
