Use a round head machine screw and put it in from the other side so only the head shows and you only have the nut, washer and a few threads showing on the inside when it is tightened on the clamp. Clean, efficient and you can remove it easily if needed.

As far as clamps there are all sorts of clamps for that job and some guys even make their own. The aircraft style he showed work great and don't chafe the tubing though.
