Yes you do need to plug the tailshaft. I use an old driveshaft yoke that i keep just for that.
You can buy a plug at any autoparts store made just for that.
You will find out if the hoist won't fit under your lower control arms and need to jack it up higher. However you jack it up make sure you use good jack stands on solid ground bla bla. You know, just be safe and take your time. It's not hard. I have done several motor/trans R&R this year on my trucks. All solo (i don't work well with others) no problem. I don't recommend you do it alone just that it's not hard.
As stated above, get the hoist arm as close to the motor as possible cuz you will need all the lift you can get
