When I installed my 2" HD tuff country lift springs up front I ended up w/ about 3" of lift. In the rear I add an add a leaf and 2" block and removed the factory 1" block to level the truck.
If your exhaust bangs around that much take it back and have them install some more hangers. LOL!
I would not worry about the stops I don't think you'll over flex it. I have some 4" blocks made by Trailmaster sitting in my garage you can have for the price of shipping no u-bolts though. This would be a good time to replace the "square" ubolts with a u-bolt flip. Look at the pics in my signature.

1981 K30, 350/465/205 dana 60 and dually 14 bolt. Has a G80, and a flat bed. Going to replace the flat bed.
1985 K20, 350/400/208 10 bolt and SF 14 bolt. I wonder where I can find some 1 tons. Hmmmmm
