There's nothing in the PCM that will shut off the fuel in a roll over. Fords have inertia switches but GMs do not. If the car is up side down there won't be any fuel to the pump and once whats in the lines runs out the engine will stop, and when the engine stops theres no crank sigbal and the PCM will shut off the pump.
I would get the injectors out and get them soaking since you may want them to soak for a while. I usually let them soak overnight. With them out tou can pull the fuel pump relay so you don't spray gas all over and then check for spark. But since you said the plugs were dry, my bet is the injectors.
