You can ground the sending wires and the gauges should max out and the other should zero. As for the oil pressure and temp. They may possibly be correct. More likely the oil press than the water temp. I've had great running engines that still only pulled 10psi and ran for years. They were just worn is all

The sending units have to be matched to the gauges and as for parts store replacements I wouldn't really trust that they are the correct ones
