So I ended up ordering 15x7 Corvette style made for trucks w/a 4" back spacing. I will be using the tires I mentioned earlier. They are the cheapest white wall I have found. Not looking for wide white as its not really era appropriate for a 68 truck.
Here is what I intend to do:
Get this blasted and powder coated black
Use these tires in 235/75/15:
And throw these on for good measure:
