This water pump has a cast outlet rather than a nipple like I have seen on some.
So, I'll go with a plug - also from the plumbing section - a short 3/4" brass PEX test plug; this thing has ribs on it so it shouldn't slip out of the heater hose and shouldn't corrode. All for $1.53 at Lowe's!
The outlet is 11/16" and apparently it's better to squeeze the 3/4" hose down onto it than try to stretch the 5/8, if you even can.
