IF you're interested in Boss 338 and you do go with the 5 lug conversion, my Dad has a set of chrome 20x8.5 with brand new tires on them. I know they were $1,600 new, you might PM him to see if he'd want to sell them. He has talked about it. His forum 'handle' is NoNeck. Im sure you could get a deal on them and pick them up, no shipping, etc. We're not too far away from you.
10" wheels will be tight on your stepside. Most guys will run a 8.5 all the way around on the steppers. .. it depends on which rear end housing is in your truck. The earlier years were .75" more narrow on either side.
I can ask him about the 338's if you're interested. all 4 are 8.5" wide. 275/45/20 tires. They'd look good on your truck with a 4/6 drop.
On the bed fenders, your truck has a 1973+ year model bed on it. The 67-72 model years had a rounded wheel arch (like the front) It's not the end of the world but that's why the change was suggested .. I think you can swap 67-72 fenders on it I'm not sure.
