I believe you'll need to replace the dash harness but honestly, I'm not 100% on this. The last one I did I replaced the harness because it needed a new one anyway. Also not sure if the temp. sending unit is different between a gauge and dummy light but you would think it would be. Do you have an auto or a 4spd? That would make a difference in what harness to look for due to the neutral safety switch wiring.
Also, you say you got a '69 cab? Is this the harness you're using or are you using the '68 harness? If you're using the '69 harness you'll need to unwrap it in order for the plug to reach the windshield wiper switch on the left side of a '68 bezel. Another option would be to use the later cluster.
If you are real picky, I know a guy who converted a '68 cab to a '71 cab by welding in the correct section of firewall to correctly locate the fuse block and other small differences. Even added a pillar vent. You'd have to be real sharp (and lucky) to tell anything had been modified.
Hopefully someone will give us a definite answer on the harness issue with gauges.
