I personally have installed three different sending units in my 56 Chevy, they all read the same. When the tank is full it reads just under full, when I have a half tank, it will read one quarter tank and stays there then it will all of a sudden be empty. I just fill it when it gets below one half.
Aftermarket sending unit in my 64 C30 is pretty accurate but I never let it get below one quarter. The same thing on one of my C10s.
