Not sure if this would apply technique-wise with a spray gun, but with rattle cans I have found that when squirting the hammered or metallic flake paint, I get much better, more even, results if the target area is lying flat, and I shoot from a greater distance.
For me, letting the paint basically "fall" in place seems to get it laid out much better.
